每至清明、除夕等传统节令,泉州人喜吃
润饼,若溯源之,此食俗可回溯至“春盘”,
遗留至今,成为古时寒食节的遗风。润饼的用
料自由,可依个人喜好,在劲道的饼皮里加入
五花肉、海蛎、胡萝卜、高丽菜、嫩豆干等主
料和芫荽、花生仁、海苔、豌豆等辅料,卷起
即可食用,口感多层次,营养更丰富。
At Qingming (Tomb-Sweeping Day) or New Year's
Eve, Quanzhouers go traditional taking to Runbing,
which can date way back to Chunpan (spring roll), a
legacy of ancient Cold Food Festival. Freely subject to
preferences, Runbing can have, into the chewy pastry,
main ingredients like streaky pork, oyster, carrot,
cabbage, fresh dried bean curd and more, coupled
with coriander, peanut kernels, seaweed, peas and
others, once rolled up, it delivers a serving with an
eclectic, nutritious texture.

“正月十五吃元宵”,是自宋代传承下来的
食俗,蕴含着团圆和满之意。泉州元宵圆别有风
味,馅心是将炒熟的花生碎、芝麻碎、糖冬瓜、
炸干葱头,拌入白糖、熟猪油后捏成的丸状,丸
馅沾水后放在干糯米粉盘里滚动,如此反复,滚
成大小适中后即可,吃起来皮嫩糯滑,过口难忘。
“Serve Yuanxiao Wan to mark Lantern Festival”, this
is an observance passed on from the Song dynasty for
a hint of reunion and unison. Quanzhou Yuanxiao Wan
(Sweet Dumplings of Glutinous Rice Flour) has a severely
distinctive flavour, with filling being of ball shape, stuffed
with pan-fried mashed peanut and sesame, sugared
white gourd and oil-fried onion, besides, mixed in with
white sugar and cooked lard to make balls. With a dip
into water, roll the moist balls on a plate of dry glutinous
rice flour, all along into a moderate size, primed for a
memorable tasting of soft wrap with slick stuffing.
